Olive Oil Granola

Ingredients (Megan’s version)
- 3 cups oats
- 2 cups walnut pieces
- 1 cup unsweetened coconut
- 1/2 cup olive oil
- 3/4 cup maple syrup
- 1/2 cup packed brown sugar
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp cardamom
- 3/4 cup chopped dried apricots
Directions
- Mix all ingredients except apricots in a large bowl
- Pour oat mixture onto a large greased baking sheet (I used a silicon
baking mat)
- Bake for 45 minutes at 300 degrees, stirring every 10 minutes
- After granola is done baking, pour into a large bowl and add
apricots (don’t add while baking – the fruit will get too dried out!)
- Enjoy plain or with yogurt. Yum!
