Olive Oil Granola

Ingredients (Megan’s version)

  • 3 cups oats
  • 2 cups walnut pieces
  • 1 cup unsweetened coconut
  • 1/2 cup olive oil
  • 3/4 cup maple syrup
  • 1/2 cup packed brown sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 3/4 cup chopped dried apricots

Directions

  • Mix all ingredients except apricots in a large bowl
  • Pour oat mixture onto a large greased baking sheet (I used a silicon baking mat)
  • Bake for 45 minutes at 300 degrees, stirring every 10 minutes
  • After granola is done baking, pour into a large bowl and add apricots (don’t add while baking – the fruit will get too dried out!)
  • Enjoy plain or with yogurt. Yum!
