Quinoa is a grain-like crop grown high in the Andean region of South America. The Incas held the crop to be sacred, referring to it as the mother of all grains. Actually it is cultivated mainly for its edible seeds that are high in protein. Even though the edible part is the seed, it is cooked like rice. Royal Quinoa, often referred to as the "King of All Quinoas," is famous for its high protein content, and large grain size. Thus quinoa is an essential and wonderful addition in diabetic diets. Quinoa is gluten- free. Royal Quinoa ("Quinua Real" in Spanish) is only native to the "intersalar region" of Bolivia, South America.
